Butter Pecan Cookies

Ingredients

For the cake:

  • 1 cup flour

  • 3/4 cups ground pecans

  • 1/3 sugar

  • a pinch of salt

  • 1/2 cup unsalted butter, room temperature

  • 1 egg

  • 1/2 teaspoon baking powder

  • 1 teaspoon vanilla extract

Preheat the oven at 350 degrees.

With an electric mixer, cream butter and sugar until light, about 3 minutes. Beat in vanilla, salt, baking powder and flour, scraping down sides of bowl. Add the egg and continue beating until the dough comes together. Fold in pecans.

Form dough into a flattened disk; wrap in plastic. Chill until firm, approximately 30 minutes.

Separate dough into 12 pieces; squeeze dough to shape into balls. Sprinkle a few pecans on top, if you wish. Place on a baking sheet.

Bake until golden brown, rotating sheet halfway through, about 15 minutes. Cool cookies on a wire rack.
