Cherry and Chocolate Chip Cake

Ingredients

  • 3/4 cup unsalted butter, at room temperature
  • 3/4 cup brown sugar
  • 3/4 cup  sugar
  • 2 eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 2-1/2 cups  all-purpose flour 
  • 1-1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 cup sour cream
  • 3/4 cup cherry pie filling
  • 1 cup semisweet chocolate chips

Preheat the oven at 350 degrees.

In the bowl of an electric mixer, cream the butter and sugars together on medium speed until well combined and fluffy, about 2 minutes. Add the eggs and vanilla, beating to combine. 

Combine the flour, baking powder, baking soda, and salt in a small bowl. Add half of the dry ingredients into the butter mixture and beat on low until combined. Add the sour cream and cherry pie filling and beat to combine. Add the remaining half of dry ingredients and stir just until combined. Fold in the chocolate chips. 

Spray a bundt pan with a baking spray. Spread the batter evenly into the pan and smooth the top of the batter. Bake in the preheated oven for about 40 minutes or until the top is set, is beginning to golden. 

Allow to cool in the pan for about 20 minutes and then invert the cake onto a cooling rack until completely cool.
