Cinnamon Pecan Cake

Ingredients

For the cake:

  • 2 1/2 cups of flour

  • 3/4 cup unsalted butter, at room temperature

  • 1 1/2 cup sugar

  • 2 teaspoons of vanilla extract

  • 3 eggs

  • 1 cup sour cream

  • 2 teaspoons of baking powder

  • 2 teaspoons of baking soda

  • 1/2 cup pecans

  • 3 teaspoons cinnamon

  • 1/2 cup chocolate chips (optional)

Preheat the oven at 350 degrees.

Spray a bundt cake pan with nonstick baking spray.

Beat butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be lighter in color. Add eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Mix in vanilla.

Combine flour, baking soda, and baking powder. Pour flour mixture into batter alternately with the sour cream, mixing until just incorporated. Fold in pecans and chocolate chips, if using, mixing just enough to evenly combine. Pour the batter into the prepared pan

Bake for about 40 minutes, or until a thin skewer inserted in the middle comes out clean.

Let the cake cool down before inverting onto wire racks and let cool completely.
