Creamy Blueberry Cake 

Ingredients

For the cake:

  • 2 cups  flour
  • 2 eggs
  • 150 g butter, at room temperature
  • 1 cup granulated sugar
  • 3 teaspoons vanilla extract
  • 2 teaspoons baking powder
  • 300 ml milk

For the frosting:

  • 630 ml heavy whipping cream
  • 300g of mascarpone cheese
  • 1 cup  confectioner sugar
  • 2 teaspoons vanilla extract

For the filling and decorations:

  • 2 cups blueberries (fresh or frozen)
  • 1 teaspoon orange zest or lemon zest, to your preference
  • 1 tablespoon of orange or lemon juice, to your preference
  • 5 tablespoons sugar
  • ¼ cup water
  • About 3 cups fresh blueberries for decoration

For the cake:

Preheat the oven at 350 degrees F.

Spray two 6-inch round cake pans with nonstick baking spray and line with parchment circles.

Cream butter with sugar until light and fluffy.  Whisk in eggs and vanilla. 

In another bowl, sift cake flour with baking powder.

Stir the flour mixture alternately with milk, beginning and ending with the flour mixture.

Pour batter in prepared cake pans and bake for approximately 35 minutes, or until a thin skewer inserted in the middle comes out clean.

Let the cakes cool down before inverting onto wire racks and let cool completely.

For the frosting:

In the bowl of an electric mixer, place the mascarpone and whisk for approximately 2 minutes.  Add the rest of the ingredients and whisk until fluffy and stiff peaks have formed, but smooth and fluffy. 

For the filling:

Place the 2 cups of fresh or frozen blueberries in a sauce pan with sugar and water over medium heat until it starts boiling, about 3 minutes.  Add the orange/lemon juice and stirring until thickened, about 25 minutes.  Add the orange zest and set aside to cool.

To assemble the cake:

Cut each cake horizontally into two.  Spread the frosting on each layer and add  about 1/3 of the jam and pipe more of the frosting to cover the jam.  Place another cake on top and repeat the process 2 more times and placing the last piece of cake on top.  Frost the cake completely.  Place the blueberries on the side of the cake.  Using a pastry tip you like, pipe decorations all around the top of the cake and...Enjoy!
