“Esse” Italian Biscottis

Ingredients

approx. 40 biscottis

  • 480 g  all-purpose flour

  • 2 large eggs, at room temperature

  • 2 tsp vanilla extract

  • 2 tsp lemon zest

  • 300 g butter, at room temperature

  • 160 g sugar

  • 1 cup chocolate chips or chunks, melted 

Instructions:

Preheat the oven to 350 °F. Line a cookie sheet with parchment paper.

In the bowl of an electric mixer, beat the butter until fluffy, approximately 3 minutes. Slowly add the eggs, one at the time.

Add the sugar, vanilla and lemon zest.

Slowly incorporate the flour, until well combined. Knead gently, by hand, to combine (don't over knead).  Dough will be soft.

Break off the dough into small pieces. Soften the dough slightly between your finger and roll into approximately 4-6 inches,  form into an S shape.  Place on prepared cookie sheet and bake for approximately 10 minutes or until lightly golden.  Let cool completely.

If wanted, dip in melted chocolate and let cool completely before serving.  Enjoy!
