Orange Shortbread Cookies

Serving: approximately 32 cookies

Ingredients

  • 8 ounce unsalted butter, at room temperature

  • 2/3 cup granulated sugar

  • 1 teaspoon pure vanilla extract

  • 2 1/4 cup all-purpose flour

  • 1/4 cup orange zest

  • 1/4 teaspoon salt

  • Extra sugar or cinnamon for sprinkling

Preheat the oven at 350 degrees.

Measure out flour and salt into a medium mixing bowl, mix well. Set aside.

Add butter, sugar, orange zest and vanilla extract to the stand mixer bowl and beat with the paddle attachment until combined.

Slowly add the flour mixture. Continue to mix on low speed until dough comes together.

Turn dough out onto a lightly floured board and shape into a disk.

Wrap well with plastic and refrigerate for 30 minutes.

Roll dough to about 1/4” thick and cut out cookies with a cookie cutter.

Place cookies on a parchment line baking sheet, sprinkle granulated sugar and cinnamon over the top of cookies generously and bake for approximately 18 minutes.

Remove from the oven, let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
