Pecan Banana Bread

Ingredients

  • 11/2 cups of unbleached all-purpose flour
  • 1 teaspoon (5 ml) baking powder
  • 1 teaspoon of baking soda
  • 1 1/4 cups of mashed ripe bananas (3-4 bananas)
  • 1/2 cup of vanilla greek yogurt
  • 3/4 cup of sugar
  • 1/4 cup of vegetable oil
  • 1 egg
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of salt
  • 1/2 cup of pecans

 

Preheat the oven to 350 °F. Spray a 23 x 13-cm (9 x 5-inch) loaf pan (a 1.5-litre (6-cup) capacity pan) with baking spray.

In a bowl, combine flour, baking powder and salt. Set aside.

In another bowl, combine bananas, yogurt and baking soda. Set aside.

In a third bowl, combine sugar, egg, oil and vanilla. 

With a wooden spoon add banana mixture to egg mixture. Slowly add dry ingredients alternately with banana mixture. Add the pecans.

Pour into the bundt cake pan. Bake for about 1 hour or until a toothpick inserted in the centre of the cake comes out clean.
