Tiramisu Cake
Ingredients
For the cake:
- 2 1/4 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 cup sugar
- 3/4 cup unsalted butter, at room temperature
- 3 eggs, at room temperature
- 2 teaspoon vanilla extract
- 1 cup buttermilk, at room temperature
For the mascarpone frosting:
- 630 ml heavy whipping cream
- 300g of mascarpone cheese
- 1 cup confectioner sugar
- 2 teaspoons vanilla extract
For the coffee syrup:
- 1 cup espresso coffee
- 1/2 cup Amarula liqueur
For the cake:
Preheat the oven at 350 degrees.
Spray two 8-inch round cake pans with nonstick baking spray.
In a bowl, whisk flour, baking powder, and salt until well combined. Set aside.
In the bowl of an electric mixer, fitted with a paddle attachment, cream butter and sugar for approximately 5 minutes, until pale and fluffy. Add eggs slowly, one at a time. Add vanilla extract.
Alternate adding flour mixture and buttermilk, beginning and ending with flour, until you obtain a smooth mixture.
Bake for pproximately 30 mins or until a toothpick inserted into the center comes out mostly clean.
Let the cakes cool down before inverting onto wire racks and let cool completely.
For the frosting:
In the bowl of an electric mixer, place the mascarpone and whisk for approximately 2 minutes. Add the rest of the ingredients and whisk until fluffy and stiff peaks have formed, but smooth and fluffy.
To assemble the cake:
Cut each cake layer in half horizontally.
Place one layer on a cake stand. Brush generously wit coffee syrup. Dust with cocoa powder and chocolate shavings (optional).
Top with mascarpone frosting and spread evenly.
Repeat with remaining layers and crumb coat the cake. Chill for 25 mins.
Frost the cake with the remainder of the frosting and smooth the sides and top.
Dust top with cocoa powder and sprinkle with chocolate shavings. Press lady fingers into the sides. Enjoy!
