Vanilla and Cherry Squares

Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • 250 g cherries
  • powdered sugar, to sprinkle on top (optional)

For the cake:

Preheat the oven at 325 degrees Fahrenheit.

Spray a 6 inch square cake pan with baking spray.

In a medium bowl sift together all-purpose flour and baking powder. Set aside.

In a stand mixer fitted with the paddle attachment, beat together butter and sugar for about 3 minutes until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla extract. On low speed, add flour mixture and beat just until combined. 

Spread the batter into prepared baking pan and smooth the top. Place the cherries on top of the batter.

Bake for 30-35 minutes until a toothpick inserted into the center of the cake comes out clean. Let the cake cool completely on a wire rack. Sprinkle the top with powdered sugar and enjoy!
