Chocolate Cookies

Ingredients

  • 2 cups flour

  • 3/4 cup of confectioners’ sugar

  • Pinch of salt

  • 1/4 cup unsweetened cocoa powder

  • 1 cup unsalted butter, room temperature

  • 1/4 teaspoon vanilla extract

Preheat the oven at 325 degrees. Line 2 baking sheets with parchment paper. Sift together flour, cocoa, and salt into a bowl. Set aside.

Place butter in the bowl of an electric mixer fitted with the paddle attachment. Beat on medium speed until fluffy. Gradually, add sugar, and beat about 2 minutes , until very light in color and fluffy, scraping down the sides of the bowl with a spatula. Add vanilla. Add flour mixture, and combine on low speed, until flour is just incorporated.

Form dough into a flattened disk; wrap in plastic. Chill until firm, approximately 1 hour.

Form dough into 3 cm balls; place on prepared baking sheet. Bake until firm, 20 to 25 minutes, rotating halfway through. Cool completely on wire rack. Dust with cocoa powder just before serving.
