Perfect Cheesecake

I have been searching for a perfect cheesecake for...years! After many attempts, I have tried  a lot of different recipes and finally, by adapting a few of them, I came up with a perfect (I think!) cheesecake recipe!

In my opinion, the magic trick to get a creamy and moist cheesecake is cooking it in a bain-marie, at lower heat, for a longer period of time. It's a little bit more complicated than just putting your pan in the oven, but it's really worth the little extra effort, trust me!

Another trick to have a very tasty cheesecake is to add some flavor to your filling - I usually like to add a bit of lemon or lime zest, depending on what type of fruits I use to decorate the cake.

Once you've mastered a few tricks, your cheesecake will come out perfect, every time!
